High West Midwinter Night’s Dram

High West Distillery is located in Park City, Utah. Nestles among rolling hills, it was founded in 2009 by a former biochemist. David Perkins went on a tour of the Maker’s Mark distillery in Loretto, Kentucky when it dawned on him. The fermentation and distilling process are very similar to his own work as a biochemist. He and his family relocated to Utah in 2009 tolarge_midwinternightsdramtrimmed open the state’s first legal distillery since 1870. The distillery began small, with just a 250-gallon still in a historic livery stable and garage. Since then, High West won Whiskey Pioneer of the Year in 2011 from Whiskey Advocate America, and now operates out of a 1600-gallon copper pot still. They also opened an educational whiskey tasting, pairing, and tour portion of their distillery that is a must-visit.

The nose of this particular product is a very well balanced mix of spice and fruit. Swirling vanilla and plum are the most evident by far and provide a warm and welcoming aroma that makes you want to dive right in! The second whiff comes with hints of caramel, and cinnamon.
