Jameson Caskmates IPA

Jameson Caskmates IPA Edition | When Two Great Worlds Collide

Jameson is quite a favored choice in Indiana as it was listed as the most popular choice amongst Hoosiers compared to other Whiskey brands. We’re getting Hoosiers will go just as wild for their Caskmates IPA edition.

Jameson had an epiphany to combine their loved signature flavor with that of Irish Pale Ale and that’s how they came up with their caskmates series. Jameson Caskmates IPA is the 2nd edition in Jameson’s line of whiskeys aged in former beer casks.Jameson caskmates ipa

Jameson has successfully partnered with breweries in the past and had an inclination that a Zesty Irish Pale Ale was just what they needed in 2017. They loaned their barrels to Franciscan Well Brewery to soak in beer and what they got back were barrels full of crisp and hoppy notes, where they were then resoaked in Jameson.

The final product holds true to the signature Jameson flavor we Hoosiers know and love while adding light hints of hops, fresh citrus, and floral notes. Bottled at 40 ABV, this whiskey is comprised of both single malts and single grains from many different distilleries.

Nose: Floral, herbal hops, grapefruit, citrus notes with subtle orchard fruits, complemented by wood shavings and a little nuttiness.

Taste: Hops and light citrus with sweet herbal notes and delicate spicy tones.

Finish: The lingering fresh fruit and hopes give way to grains of barley and a signature smooth finish.

“The expression picks up the best parts of an IPA. Has the juicy quality of a New England IPA. A lot of orange and citrus, almost like an orange creamsicle.”

The other blend in their Caskmates series is aged in stout barrels. All we have to say is, there’s a reason that Jameson is the worlds #1 selling Irish Whiskey and when you combine two great products you get something even more spectacular. Say hello to Jameson’s Caskmates IPA Edition. Cheers!

WhistlePig FarmStock

Farm-to-Bottle: WhistlePig FarmStock

Farm-to-fork eating is all craze today. We want to know that what we are putting into our bodies is fresh. Straight from the ground and onto our plates. Well, we should be thinking the same way about the drinks we put into our bodies.  Especially when it comes to alcoholic beverages with unknown amounts of sugar and additives. WhistlePig had a vision of creating a true farm-to-bottle whiskey and they did just that. WhistlePig FarmStock whiskey was created.

WhistlePig FarmStock Whiskey “is the manifestation of the dream that launched the company: to produce the finest whiskey in the world from our Vermont farm.” Farmstock is a blended rye whiskey made of young estate whiskey, five and six-year estate ryes, and MPG 12-year whiskey stock. This 86 proof blend really embraces the spiciness of both the local grains and wood. It is amber to the eye and bottle at 43% ABV.WhistlePig FarmStock

Nose: Deep and complex aromas, there is a lot going on here. It is mostly made of a rich woody oak. It has subtle hints of dark, salt caramel and then it leaves on a nice fruity note. The grain-forward nature of this whiskey is said to leave an air of baking bread in the nostrils.

Palate: Despite the sweetness in the nose, the palate accentuates the dryer aspects of this whiskey. Again, predominantly oaky there are sweeter florally flavors at the end with hints of citrus and stone fruit.

Finish: Intricate and enduring finish featuring winter fruit, dark chocolate, tobacco, butterscotch, and vanilla founded in classic rye spice.

Try the WhistlePig FarmStock Manhattan. Combine 2oz FarmStock, 1/2oz Sweet Vermouth, 2 dashes of Angostura. Garnish with a Cherry and wa-la! You know what you’re getting with this whiskey and that’s a true farm-to-bottle whiskey. Heck, it’s even bottled in a barn! You can reserve your own bottle of WhistlePig Farmstock here.

Jefferson’s Very Small Batch

Thomas Jefferson once said, “I hold to it, that a little rebellion, now and then, is a good thing, and as necessary in the political world as storms in the physical.” This quote reflects the true nature of Thomas Jefferson, known for his curiosity and experimental spirit. Today, living on in his name, Jefferson’s Bourbon is a symbol for an experimental spirit. Of course, there are many different Jefferson’s bourbons but today, let’s talk about the Jefferson’s Ridiculously Small Batch. Jefferson's

Jefferson’s Small Batch is a combination of up to four different Kentucky straight bourbon whiskeys of different ages. By combining these different whiskeys, Jefferson’s achieves a complexity and balance while maintaining the consistency needed in a bourbon. They say that this Bourbon is perfect for both the connoisseur and someone who is just looking to get into whiskey. Jefferson’s goal is to create uncommon bourbon and they’ve succeeded. They are constantly seeking out new and aged barrels of bourbon from established distilleries that have already perfected their art for over hundreds of years.

Jefferson’s Small Batch is aged in a new charred oak cask and bottled at ABV 41.15%. It is light caramel in color and grainy yet fruity to the nose. It has a medium, full-bodied, slightly hot palate with a bit of sugar cane, but not as much sweetness as you’d think according to the aroma. It is sure to last a while in the finish with some bitterness, oak tannin, and charcoal that fades away with a bit of sweet and honey. Overall, this is simply a pleasant whiskey that looks good on the shelf.

We are excited about our new Jefferson’s barrels and will be premiering these barrels on August 26, 2017. This is a “no frills” whiskey that can pleasantly be drunk while hanging out, watching TV or reading a book. Stop by for a taste or reserve your bottle today, that is if you’re a curious soul like good ol’ Thomas Jefferson. Cheers!

George Remus

George Remus Bourbon

If you are one who likes to “think about your drink”, are a spirit enthusiast, or just have an interest in the history of America, at one point or another you will be reading about bourbon. Once you start reading into the history of bourbon (its birth, near death, and revitalization), you will no-doubt hear the name, George Remus.

George Remus, who was given the title of “King of the Bootleggers”, was actually born in Germany before his family moved to Chicago when he was just a child. George followed his father’s footstep and became a pharmacist at the young age of 19, but left the trade in his mid-twenties to become a lawyer, focusing in criminal defense. With the passing of the 18th Amendment and the start of prohibition, George saw many of his criminal clientele grow, and become very rich making and selling bourbon. By using his background as a pharmacist, and his knowledge as a lawyer, George found loopholes in the law to make and sell bonded bourbon for “medicinal purposes” legally, but also organized to have his own product “stolen” by (his own) hijackers, where he then sold his product illegally. George soon moved to the Cincinnati area, where distilleries were plentiful and purchased several to help make his personal secret recipe, and to continue to grow his trade.  George grew a 40 million dollar empire where he was known for throwing some of the most George Remusextravagant parties people had ever seen.  Many believe that it is George Remus that inspired the character Jay Gatsby in the iconic F. Scott Fitzgerald book “The Great Gatsby”.

This bourbon is a 4 yr. old MGP release, their 2nd release under their own branding (last years Metze’s select was their first, a fantastic rye if you can find it), so you know it will be good. It is a 94 proof high-rye blend used to recreate the flavor profile of the iconic George Remus brands of days past.

Nose:  Fruit (orange and cherry) with soft rye spice hit up front. Following is a mix of sweetened wood, containing hints of maple and vanilla that present but don’t overtake.

Taste:  The sweet vanilla-maple notes from the nose quickly find the front of the tongue, before fading into more of a sweet corn as it walks the tongue towards the mid-pallet. This is where the rye spice grows, but never takes over as rye spice sometimes tends to do (possibly by the vanilla notes that never went away). Arriving late to the party are some subtle hints of chard caramel and notes of pepper, that starts sliding back down towards the front third of the tongue a bit, not so much to the back as in most bourbons, making this one a bit unique.

Finish:  A medium finish leaves you a bit unsure if you just enjoyed a sweet rye, or a spicy bourbon, but truth be told, you just enjoyed the best of both. There are some high-priced limited releases that are known for this complex mix of profiles, but are twice the price and in a side-by-side would not distinguish itself from this bourbon at half the cost.

Truth be told I think I would enjoy this bourbon even more then I already do if the proof were just a bit higher (100 proof would be a sweet spot IMO), but that said this is absolutely worth a purchase! I tend to lean towards a high proof, high rye kick to my bourbons, and this gives me just enough of both to keep me interested, yet still provides me a fun sweetness that keeps it in play as an option when I want something a bit softer. If you are into cocktails, I could see this working fantastically in a Old Fashion, so keep this in mind if cocktails is your jam.

Contact us today to reserve your bottle of George Remus Bourbon. Cheers!

Ardbeg Kelpie Whisky

Ardbeg Kelpie Whisky – Master of Malt

Ardbeg Kelpie Whisky

Ardbeg has been made on the small, remote Scottish Isle of Islay for over 200 years. Ardbeg Kelpie gets its name from the legends of the shape-shifting kelpie that revolve around the sea of Ardbeg. They say that the kelpie can take the form of a horse, or a bull, and may have claws, or even be a dog with the head of an ant that flies. Robert Burns once wrote about this mysterious creature in his poems. This Ardbeg Kelpie is a limited-edition whiskey that released in March of 2017. This whiskey is 100% malted barley from a single distillery and dried with peat. It is matured in an ex-bourbon cask and a virgin cask made from Adyghe republic oak and bottled at 46% ABV.

Ardbeg Kelpie is burnished gold in color and is a wonderfully intense whiskey. Each person experiences the nose, taste, and finish a little differently. There are many intertwined aromas that have been described as powerful, dark chocolatey, or sea-weedy with also a bit of spicy black pepper. The taste is far harder to determine, to each their own ideas, whether it’s smoked bacon, roasted peanuts, or ginger and nutmeg, the taste is just as shape-shifty as the tales around it. The finish seemingly lasts forever with deep, slightly dry flavors of gentle smoke and rich toffee. The Ardbeg Kelpie has a vast profile of official flavors all the way from smoky to floral. This might just be the fun, flavored, and mysterious whiskey you need to spice up your night.

This limited-edition Ardbeg Kelpie was intended to be released for the members of the Ardbeg Committee; however, a few retailers in the US were lucky enough to snag some bottles, including us! No proof of membership is required to purchase a bottle, let us know if you are interested in reserving a bottle at your nearest location. We hope you enjoy this wonderful whiskey, let us know what you think. Cheers!

Minor Case Straight Rye Whiskey

Minor Case Straight Rye Whiskey

Minor Case’s mission in life was to craft only the finest whiskey. “He never settled for less.” Limestone Branch Distillery’s latest release, Minor Case Straight Rye Whiskey, is a tribute to Minor Case, SteveMinor Case Rye Whiskey and Paul Beam’s great-grandfather. Minor was a distiller prior to the Prohibition era, passing away shortly after the 18th amendment was repealed. Minor had once distilled her products prior to prohibition in the same location Limestone Branch Distillery reopened in 2011. Stephen Beam says the bourbon is their idea of what Minor might have produced if he had the opportunity distil again.

The bottle itself will catch your eye. Its antique, flash look resembles bottles that you would find 100 years ago.

The two-year-old Indiana Rye is finished in Sherry Casks and bottled at 45% ABV. The sherry cask finish gives it a “smooth mouth feel” with hints of dark fruit & spice. According to the bourbon guy, it takes some time for the full effects of the whiskey to develop on the nose. After about 20 minutes of breathing, you’ll find the smells brought on from the sherry cask finish: darker fruits, rich spices, cedar & brown sugar. These same flavors experienced on the palette and finish of the bourbon. The finish lingers, spicy and warm, with strong cider and rye spice flavors.

Interested in trying Limestone Branch Distillery’s latest release? Contact us today to reserve your bottle. You won’t regret trying this exquisite rye whiskey named after a truly legendary man. Raise a glass in tribute to Minor. Cheers!

Crown Royal Noble

Crown Royal Noble Collection

Crown Royal is stepping up their game with a new Noble Collection, which honors the brand’s monarchy roots. The first release in the Noble Collection is Crown Royal Cornerstone Blend Canadian Whiskey. It’s a combination from three of Crown Royal’s fundamental whiskeys: a spicy Canadian rye, a coffee still whiskey and a bourbon-style whiskey aged in charred American white oak. The final product produces a deep gold whiskey with strong flavors and a soft finish.

The Crown Royal Noble Collection was designed to honor the monarchy that reigned its Canadian roots. Understanding the history of Crown Royal and its brand will help you understand the distinct importance of this limited release. In 1939, King George VI and Queen Elizabeth set off to visit Canada. This was a big deal because no other monarchy had traveled to North America to visit the country. He wanted perfection, so he tried more than 600 blends before deciding the final blend of 50 whiskeys. Exceptionally smooth, this whiskey blend was fit for royalty and was even presented in a decanter wrapped with regal purple bag and gold stitching, just like it is today.

To this day, Crown Royal is proud to continue the tradition of producing whiskey fit for a King. For even the most discerning of palates, Crown Royal’s whiskey is considered one of the finest whiskeys of all. And the Crown Royal Noble Collection is no different. Inspired by the monarchy that led to the first bottle ever created, the Cornerstone Blend is perfect for whiskey lovers everywhere. On the nose, you can expect ride fruits, malted grain, toffee, and vanilla. The palate is balanced, with notes of sweet caramel, toasted grains, subtle oak and tropical fruits. The tart fruit flavors continue into the finish, ending with a gentle woody spice.

The first release in this collection has been long anticipated. Be the first to try this extraordinary blend and let us know what you think! Bottles will hit our stores this week. Stop by your local Payless Liquors or reserve your bottle online.

Willett 3 Year Rye Small Batch

The Willett name dates back to one of the very first pewters, Edward Willett of Maryland. However, his descendant, Aloysius Lambert “Thompson” Willett of Bardstown, Kentucky was where it all began. Thompson began his love for whiskey and rye by working with his father at the Bernheim distillery. After a couple of years, he left to start the Willett Distilling Company with his brother, Johnny. They erected their pride and joy on their family farm, and history was made as this small family venture began to blossom.

Their first batch was officiallyWillett produced in 1937 on Saint Patrick’s Day, located on high ground to ensure the Kentucky breeze would aid in the maturation. Over several years, Thompson’s brothers joined the company and eventually it was bought from him by his son-in-law, while his daughter was made president of the company. They renamed it Kentucky Bourbon Distillers, though it still remains very much a family business. After a revamping of their facilities, they went back into business on what would have been Thompson’s 103rd birthday.

This particular small batch is a chestnut color, understandably lighter than the average whiskey due to its shorter fermentation period. At first glance, you may think it won’t pack quite as much of a punch as its siblings in the Willett line. However, you will be pleasantly surprised. At first whiff, it’s all leather and light spices; but if you dwindle a bit, you’ll pick up on the light, sweet spices.

In your first sip, you’ll be immersed in a diverse flavor combination that may shock your palette at first—but in the best possible way. On the front, this rye offers up notes of mint and tingling spice. As it goes down your throat, you get the familiar warmth of all good rye. Evergreens, sweet caramel, and dry dark clove and oak all dance around in harmony in this delicious 3 year rye.

This special treat will be in limited supply on our shelves, so be sure to contact us soon. You will not want to miss out on tasting what the Willett family name is all about, and just how much they really understand rye whiskey.

The Woodford Reserve Family of Bourbons

Nestled in the rolling hills of bluegrass and thoroughbred farms sits the historic Woodford Reserve Distillery. Woodford Reserve is one of Kentucky’s oldest and smallest distilleries. The distillery was built on history, sitting where Elijah Pepper began in 1812.

Woodford Reserve is crafted in small batches. This process allows uses all five sources of WoodfordReservebourbon flavor giving it its distinct taste and crisp, clean finish. The five sources are grain recipe, water source, fermentation, distillation, and maturation.

Woodford Reserve Distillers Select has a brilliant honey amber color. On the nose, you’ll find hints of mint and oranges. The taste is rich and complex with flavors of citrus, cinnamon and cocoa. The warm and satisfying finish is smooth and silky.

The next expression in Woodford’s lineup is their Kentucky Straight Rye Whiskey. The mash bill contains 53% rye which results in a spicy and sweet whiskey. The distillers work with the five sources of flavor to ensure the unique taste and a balanced flavor to produce the distinct taste they looking for in every bottle of Woodford Reserve.

Uniquely matured in separate, charred oak barrels gives Woodford Reserve Double Oaked a soft, sweet oak character. This innovative approach to twice-barreled bourbon creates the rich and colorful flavor Master Distiller Chris Morris was looking for. The mastermind behind Woodford Reserve Double Oaked, Chris knows the secrets to making good whiskey are time and patience.

Liz&CharlieWoodfordRecently, Liz (the self appointed bourbon Grinch of Payless) and Charlie got the opportunity to sit down with some friends to pick out some Woodford Reserve barrels of their own! The Charlie Selection has the tasting notes of oak, chocolate and pecans with a slight hint of coconut.  Liz’s selection has flavors of oak, tea leaf, molasses and caramel, with a hint of dark chocolate and apple. And you’re in luck, we’ve got 2 events where you can sample Liz and Charlie’s picks. We’ll be at our Uptown Drive store June 11 and our Greenwood Mall store June 18. And now they have a new expression to their line-up, Old Bones Bourbon.

Old Bones is a barrel-strength high rye bourbon coming in at 110 proof.  The mash-bill is composed of 55% corn, 40% rye, and 5% barley. Only 2,430 bottles of this 10-year-old bourbon were packaged.

Whether served straight or in a craft cocktail, these spirits are meant to be sipped and savored. Looking for a bottle of Old Bones? Fill out our Contact Us form today and reserve before they are gone!

WYOMING. FAMILY. WHISKEY.

ONLY WYOMING INGREDIENTS

The Big Horn Basin has everything we need to make great bourbon, and it is important to us to source our ingredients locally. The consistency and uniqueness of these whiskey elements make for a better bourbon that stands apart. It’s the Whiskey of the West.2016-03-31 10_34_05-Wyoming Whiskey

LOCAL CORN, WHEAT, BARLEY, RYE AND NO GMOS.

WE KNOW WHO GROWS. Brent Rageth from Rageth Farm in Byron, Wyoming has worked with Wyoming Whiskey from the start to select strains of non-GMO corn, wheat, barley, and winter rye for specific starch and sugar yields, the building blocks of bourbon making. We use a corn strain that matures in 92 days, and is hand-selected by Brent. Rageth Farms also delivers summer and winter wheat that is grown exclusively for Wyoming Whiskey, and a winter rye that will be the key ingredient for a couple of rye products that are on the near horizon.

Orphan Barrel – Forged Oak Kentucky Straight Bourbon

A pillar of strength rooted in time and wisdom,
Forged Oak was found while foraging through the historic
Stitzel-Weller rickhouses. This Kentucky Straight Bourbon Whiskey spent 15 contemplative years in charred American white oak barrels.

Forged Oak is a statuesque whiskey with aromas of cedar, maple and vanilla bean that give way to seasoned woody notes of cocoa and young berries, ultimately leading to a long, dry finish of black pepper.

“Ok, I have been sampling whiskey for some time now, and I have gotten to know exactly what I like and dislike, but I still enjoy pushing my experiences in new directions; the road less traveled theory. Every now again there is a whiskey that comes up that is on my “must try” list.

I received the sample bottle from my editor for this review a few more weeks ago than I care to admit, as I would then be past my due date for this article.  I have saved it for the last in this batch, my reward to keep me pushing towards that finish line, however arbitrary it is, as there is always more to sample.

As you may remember, I loved the Rhetoric by Orphan Barrel. As for Orphan Barrel Forged Oak, which is the focus of this review, this straight Kentucky bourbon spent 15 years in barrels in the Stizler-Weller rickhouses.  And I am sure that many of you know that Pappy Van Winkle built that house.  Now I hope you can understand my plan to use this as a reward.
