Produced by the winemakers at Copain of Mendocino County, California, this rosé is made from pinot noir grapes. Copain’s wine making philosophy is evident in this French style wine, which means lower alcohol and higher acidity. The Tous Ensemble Rosé of 2017 has 13.5% alcohol and is aged in stainless steel, according to the saignée method.

The 2017 season was marked by significant rainfall, ending the five-year drought that California had been experiencing. When temperatures rose, the fruit ripened quickly, but an expeditious harvest allowed the winemaker to gather all the grapes at their peak ripeness.

Tasting Notes

The Tous Ensemble Rosé of 2017 boasts a beautiful pale salmon hue. The nose is filled with hints of spring with aroma of crisp red fruits and white flowers. The Growing Popularity of Rosé

All over the world, and especially in the U.S., sales of Rosé wines have exploded over the past few years. Millenials and social media are driving the upward trend with catchphrases like “yes way, Rosé” and “Rosé all day.” Traditionally thought of as a summery wine, Rosés can now easily be found and enjoyed year-round.

Not just your grandma’s White Zin, Rosés come in a wide range of enticing varietals, made from the same grapes that make pinot noir, roussane, cabernet sauvignon, syrah, or merlot. Wine grapes come in white and red varieties, but not pink, and Rosé is not made by mixing the two. The unique hue of a rosé comes from the method of its fermentation. Red wines take their color from the juice of the grapes soaking, or macerating, in the red skins of the grapes. White wines do not go through this prolonged period of maceration. Rosés navigate a middle course: the juice macerates in the skins but only for a short time, just enough to give it its color.

There is no standard length of time of maceration for a rosé, and this means there is no standard color. The longer it is allowed to soak on the skins, the darker the color. With its enticing range of pink shades, Rosé provides a celebratory vibe for any day – and Instagram-worthy photo ops.

What Is a Rosé?

A rosé wine is a wine intermediate in color between a white and a red wine. When juice is extracted from grapes, it is always clear in color, whether the grape is red, green or dark purple. Red wines get their color when the juice soaks in the skins of the grapes they came from, a process known as maceration.

There are, however, no pink grapes. Rosé is made by macerating the juice of red grapes for only a brief period of time, which makes the final product more of a pink color. The final shade will depend on how long the juice has been allowed to soak up the color from the grape skins.

Provence, a region in southern France, is the region most recognized for producing rosé wines, although a rosé can come from anywhere. There are many different varietals and shades of rosé, so you are sure to find one that suits your tastes and your budget.

The Tastes of the Rosé Family

The tastes of rosé wines are quite diverse, as are the regions they come from. While berry flavors and crisp finishes are common, there are heartier, earthier elements, too, like tobacco hints and leather. Some rosés are light in color while others have darker, stronger hues. They use a wide variety of grapes and macerate for different lengths of time. Some rosés are even sweet, though more commonly they are dry.

Bourbon barrel-aged wine has soared in popularity since its official inception in 2014 and many brands have hopped in on the trend. This isn’t quite the first time that winemakers have used bourbon barrels in winemaking, however. Modern bourbon barrel winemaking is all about boosting flavor and richness. “When we use bourbon barrels to finish a portion of the wine, we introduce a different, more intense set of aromas and flavors that would be less pronounced in traditional wine barrels.”

Mondavi Bourbon Barrel Aged Cabernet Sauvignon

Robert Mondavi’s vineyards are what one could categorizer as the very niche category of “grape paradise”. With sunshine and fog living in perfect equilibrium, it’s no surprise that these wines are notorious for their quality. The slow and drawn out process of growing the pribourbon-aged-cabernet-sauvignon-btze winning grapes pays off with their depth and purity of flavor. Mondavi himself spoke to the immense impact that the location of his vineyard has on his wines, “there is no secret: great wine begins in the vineyard.”

This particular vineyard’s notable history began in 1968 when Robert Mondavi developed a dry oak-aged Sauvignon Blanc called Fumé Blanc. It became so popular that it is now synonymous with Sauvignon blanc, thus began the incredibly astronomical success of Robert Mondavi’s wines and vineyard. From the Fumé Blanc came a number of incredible wines, but today the subject is none other than the Robert Mondavi Bourbon Barrel Aged Cabernet Sauvignon.
A member of Mondavi’s Private Selection, this wine is nothing short of what you’d expect from such a notorious name in this industry. It is pleasant to all your senses. Visually, its deep red color is perfectly matched to the deep warm smell we are initially greeted with. The toasty smell is paired sweetly with vanilla and brown sugar. Our mouths are watering even before our first sip!

The taste is just as delicious as one would imagine. It’s as if the Earthy scent of this red has been liquefied, sprinkled with the finest spices, and aged in the greatest bourbon barrels on the perfect vineyard! Among the traditionally delicious cabernet sauvignon taste, there is a mix of ripe blackberries and tart black cherries.

When Bourbon met Zinfandel

La Crema Wine

La Crema Winery is located in the Russian River Valley of California and has been making Pinot Noir, Chardonnay, & Pinot Gris since 1979. Now a part of the Jackson Family Wines red-winter-wine-packowned by sisters Laura Jackson-Giron and Jennifer Jackson, La Crema handcrafts their wine to ensure balance and intense fruit flavors in very bottle.

The Russian River valley is ideal for producing balanced wines. The first few vintages at La Crema winery were devoted to learning the ins and outs of growing grapes and winemaking in this cool, windy climate. Now, careful canopy management and hand harvesting assure ripe and undamaged grapes. Director of Winemaking, Elizabeth Grant-Douglas then uses artisan winemaking techniques that bring out their distinct flavor.

To ensure La Crema wines stay true to both the varietal and the region, the wine-making teams uses traditional wine-making techniques. They whole-press their Chardonnays before they are fermented and aged in French oak barrels. Before fermentation, the Pinot Noir grapes are cold-soaked in open-top fermenters for five-eight days then aged in both new and used French oak barrels.

Studies have shown that adults who drink light to moderate amounts of alcohol may be less likely to develop heart disease than those who do not drink at all or are heavy drinkers.

Researchers have suggested red wine, in moderation, has long been thought of as heart healthy. The alcohol and antioxidants may help prevent heart disease. Fiftieth Reserve

This Sunday many eyes will be watching the Denver Broncos take on the Carolina Panthers in Super Bowl 50. This is the golden anniversary of the Super Bowl and to commemorate this achievement, Freemark Abbey along with leading winemaker, Ted Edwards, were ECM304096selected to create a one-of-a-kind, limited release wine. Fiftieth Reserve is a 2013 Napa Valley Bordeaux-style red wine. It was sourced from pedigreed single vineyard sites from the honored Spring Mountain.

Fiftieth Reserve has rich, dark fruit aromas of dark cherry, Bay leaf, and other herbs. On the palate, ripe boysenberry and Santa Rosa plum are accompanied by a hint of milk chocolate.

The blend of Fiftieth Reserve is 67% Merlot, 14.3% Cabernet Sauvignon, 13% Cabernet Franc, and 5.7% Petit Verdot. The wine was aged in premium French oak barrels for 18 months. The life span of this wine if stored in a proper cellar is 20+ years. So drink now or save it for Super Bowl 70.

Freemark Abbey began in 1886, when Josephine Tychson established the original winery along Route 29 in St. Helena where Freemark Abbey still stands. Tyschson is one of the firm women winegrowers on record.  The name of the winery was created in 1939, when the three owners – Charles Freeman, Markquand Foster and Abbey Ahern – combined their names to form the “Freemark Abbey.” Ted Edwards has been a winemaker at Freemark Abbey since 1985. He was named partner in 1992 and is now Director of Winemaking.

Veuve Clicquot Yellow Label Brut

Founded in 1772 by Philippe Clicquot-Muiron, Veuve Clicquot played an important role in establishing champagne as a favored drink of the upper class throughout Europe.  Philippe owned a number of vineyards decided to establish Clicquot House wines.  When he passed in 1805, he left his widow, Barbe, in control of a company. Madame Clicquot became the first woman to take over a Champagne house. The French word for window is Veuve.

bouteille-champ_yellow-prodBy 1866 Veuve Clicquot had become both a substantial Champagne house and a respected brand. Recognized by its distinctive bright yellow labels, the wine holds a royal warrant from Queen Elizabeth II of the United Kingdom.

Veuve Clicquot Yellow Label has grapes from 50 to 60 growing areas. They include approximately 55% Pinot Noir, 20% Pinot Meunier and the remainder Chardonnay. Each grape helps ensure the structure, round out the blend, and provide a balanced wine’s elegance & sophistication.

2012 Rombauer Chardonnay

Sitting on a tree covered knoll overlooking the Napa Valley is Rombauer Vineyards which was founded in 1982 by Koerner and Joan Rombauer.  The winery features caves that extend for over a mile into the hillside and they provide a constant temperature and humidity which result in optimum conditions for aging Rombauer wines.

The 2012 Rombauer Carneros Chardonnay was aged for ten months in American and French Oak. It is a soft yellow color that will darken with age. Aging Requirements

Did you know that a spirit must meet a required minimum of 2 years to be recognized as a cognac by law? Hardvy VS meets those requirement with an added 3 years, just to make sure. Some would even consider it to be extremely “youthful”, hence the short aging process.

Produced in small batches, 1,000 Stories is sourced from Mendocino County. Each lot is started with a traditional aging process in American and French wine barrels. The next step I its aging process is the introduction of the wine to bourbon barrels. The bourbon barrel aging creates a new flavor profile of warm vanilla, spices and caramel. In the final step of the process, the blend is transferred to old bourbon barrels from Four Roses and Heaven Hill to complete the aging process. It’s a wine like you’ve never had before! It’s represented as a dark plum color with hints of vanilla, berry and smoke in the aroma. The taste is similar to jam with strong notes of plum. This wine is perfect to enjoy with your love paired with a quiet night in on Valentine’s Day. He will certainly appreciate notes of bourbon.

Return to Downton Abbey with This Wine Collection

Attention all avid Downton Abbey fans! The Downton Abbey Wine Collection has expanded their portfolio with the Countess of Grantham Collection, and just in time for the show’s fifth season. The collection features a Cabernet Sauvignon and a Chardonnay. These wines were inspired by Lady Cora Crawley, the American-born wife of a British aristocrat, Robert Crawley, Earl of Grantham.

The Downton Abbey duo of wines are crafted with premium fruit from the prominent Entre-Ceux-Mers region of Bordeaux, France by the Dulong Grand Vins. The family-owned vineyard has well more than 130 years of winemaking experience. It is quite possible that the Dulong ancestors might have very well made the wines enjoyed at Downton.

Downton Abbet Claret

Claret is an elegant, dry red blend made with the finest grapes from the Entre-Ceux-Mers region of France. Each bottle of Claret was made using the traditional vinification process, which includes aging in temperature-controlled environments for 4 to 5 weeks for the ideal color and flavor. Then, the wine goes through another nine months of aging prior to the final blend. The result of this process is a deep purple color that embodies sweet scents of blackberries, raspberries, and black currants. Hints of spice are also present due to the Malbec blend. On the palate, you will notice a well-rounded taste of ripe fruits from the Merlot. And finally, the Cab aspects give an added freshness to the overall tone, and a silky finish.

Blend: 70% Merlot, 25% Cabernet Sauvignon, 5% Malbec

Downton Abbey Blanc

A Muscadelle and Semillon Blanc blend, Blanc is a classic white wine also made with grapes from Entre-Ceux-Mers in Bordeaux, France. To ensure the best flavor, the grapes were harvested at the best time, when they were ripe and full of flavor.

Blanc is a lovely pale yellow color with a sweet aroma. On the palate, there are notes of tangerine, orange, and apricots. All the citrusy fruits meld together for a delightful flavor. This is a perfectly balanced wine that offers a refreshing, lingering finish.

This month we welcomed two new wines to our stores from The Prisoner Wine Company Winery. Prisoner Wines offer a burst of flavor that will compliment any holiday celebration.

Prisoner Wines are truly one-of-a-kind wines launched in 2003 by Dave Phinney. Dave was inspired by the “mixed black” blends first made by Italian immigrants, who settled in the Napa Valley. The wines produced by Prisoner Wines are innovative and unique in their own respects. In order to cultivate this distinct blend, growers pay careful attention to the complex foundation of the relationships between the different grapes. Grapes are acquired from more than 80 vineyards in exclusive regions of Napa Valley.

Currently Prisoner Wines has a collection of four: The Prisoner, Blindfold, Cuttings and Saldo. In Payless Liquors stores we are carrying the Blindfold and Cuttings bottles.

Blindfold

A bold and intriguing white wine blend, Blindfold was created on a Chardonnay base and evokes fresh flavors of lemon zest, pear and mandarin orange. Hints of roasted marshmallow, spiced apple tart and pineapple are also present. Enjoy a creamy, yet rich and balanced overall taste.

Cuttings

This week, we’ve switched gears and turned our focus toward wine. In case you missed it, Wine Spectator magazine has released its Top 100 Wines of 2014. We are proud to announce that Payless Liquors is the exclusive retailer of the #1 wine, Dow’s Vintage Port 2011. Dow’s received a 99 point rating from the magazine, which is the highest honor. It was also the first fortified and first Portuguese wine to top the famous list. So what makes this wine so great? Dow’s has been owned and operated by the Symington family since 1912, but the origins of the Port can be dated back all the way to 1878, when it was one of the first wines to have its own vineyard established. The Symingtons have been producers of wines for five generations, but their involvement with the wine industry dates back almost fourteen generations to their beloved great-grandmother, Beatrice Leitao de Carvalhosa Atkinson. This family is a well-known wine producer throughout Europe, and owns what is also recognized as the leading vineyard in the Douro Valley.
