Yellow Spot Single Pot Still Irish Whiskey

Yellow Spot Single Pot Still Irish Whiskey originated in the 1800s and was last bottled in the late 1950s.  However, Mitchell & Son announced that they are re-introducing Yellow Spot and it has made its way over to this side of the pond!

The Spot Range

So what is the significance of the name “Yellow Spot”?  Originally, there was a whole host of “Spot” whiskeys made by the Mitchell family back in the 1800s, including Green Spot, and Yellow Spot.  The whiskies were made at the Jameson Distillery and placed into a variety of empty barrels provided by the Mitchells then aged back at their cellars.

The casks would then be matured in their warehouses and they signified the age by a dab of paint.  That dab of paint is how the spot range got its name.  Blue is the youngest range, green was 10 years, yellow was 12 and red was 15.

Single Pot Still

Yellow Spot is a Single Pot Still Irish Whiskey. Single pot still does not mean the whiskey is distilled just once, but rather that it has been triple distilled in traditional copper pot stills within a single distillery.  The whiskey is then matured for 12 years in three oak cask types: American Bourbon barrel, Spanish sherry, and Spanish Malaga casks.

Tasting notes

The nose of Yellow spot has notes of peach and apricot with honey and a hint of spice.  The palate is as fruity as the nose with flavors of milk chocolate, fresh coffee and notes of toasted oak.  The finish is again sweet with notes of apricots and red grapes that is sophisticated and complex.

Jefferson’s Bourbon prides itself on creating unique bourbon.  And their latest blend is no different.  It comes to us by way of a very unlikely source: Napa Valley.  Please welcome Jefferson’s Reserve Groth Reserve Cask Finish.

NAPA VALLEY INFLUENCE

When not drinking bourbon, Jefferson’s Founder and Master Blender Trey Zoeller can be found enjoying a good Cabernet.  He was curious to see if he could combine the bold fruit flavors in wine with the spice of the Reserve Bourbon.

AGING PROCESS AND FLAVORS

Jefferson’s Reserve Bourbon was first aged in new, charred, white oak barrels for six years.  It was then moved to Groth Cabernet Sauvignon casks and aged for another 9 months.

This new finish added a lush fruit flavor and a sweet vanilla character to the bourbon. Also present are flavors of black cherry and blackberry blend with the spice of the rye and the toffee notes of the bourbon.

Craft Distillery

Stranahan’s was founded by Jess Graber and George Stranahan, the whiskey’s namesake, in Colorado in 2004.  Colorado’s first microdistillery, they were also the state’s first legal distillery since prohibition.

Also being one of the first craft whiskey distillers in the US, Stranahan’s is said to have “kicked off the Colorado distilling craze”.  They are dedicated to making the smoothest, most distinctively-flavored whiskey on the market using hand-crafted distilling techniques and Colorado’s premium natural ingredients

Nose: Dried apricot, tack-shed leather, black licorice, hint of wet cedar.

Palate: Turkish, dark roast coffee, butterscotch oak, cayenne and Mexican hot chocolate with a parting gift of a rolling creamy finish.

Who is Colonel Taylor?

Bourbon founding father, Colonel Edmund Haynes Taylor, Jr. left a lasting legacy on the ever-growing industry. Even today the techniques he perfected in the Civil War era are still used today. The E.H. Small Batch Bourbon was aged for 7 years in the famous Colonel Taylor warehouses, which were built in 1881. It’s one of the most affordable of the Buffalo Trace collection and presents a smooth and delicate character. A great spirit for sipping bottled at 100 proof.

Flavor Profile

The aroma is filled with your usual vanilla and caramel scents, but with an unexpected green apple and woody smell. The nose also presents unusual notes of honey and hot cinnamon. On the palate the corn base is apparent with notes of tangy apple cider, toffee and butter. Hints of butterscotch and caramel corn are also tasted on the first sip. The finish has just enough bite with a very pleasing medium-to-long finish with caramel lingering throughout.

David Stewart celebrates his 50th year at The Balvenie with his release of DoubleWood 17. The Single Malt Scotch Whisky embraces his most cherished achievement, consecutive maturation in two different types of cask, a process referred to as ‘cask finishing’.

Extra 5 Years

You may be familiar with the wildly popular 12 year-old DoubleWood. The key difference between the Balvenie 12yr and 17yr is the maturation process. The longer aging process sets the tone for distinctly different deep vanilla, green apple and toffee tones. It also provides a richer and more complex flavor. First all DoubleWood whisky matured in American oak barrels that impart sweet vanilla tones. Then with an extra five years in ex-bourbon oak casks followed by a short stint in ex-sherry European oak, the 17yr offers a perfect balance of fruit, oak and malt. Rich notes of spice also add depth to the overall fullness of flavor.

Expressions of DoubleWood

Nikka Grain Whisky

New Japanese Whisky: Nikka Coffey Still Grain

Japanese Whisky has been quite the talk of the town lately among coinsurers. In case you aren’t familiar with this varietal, it’s similar to a Scotch whisky rather than Irish, American and Canadian styles. This week at Payless Liquors we welcomed a new whisky to the collection, Nikka Coffey Still Japanese Grain.

Grain Whisky

When sipping on Nikka Coffey you’ll notice it’s a blend of single malt and grain whiskies. What exactly does a blend mean, you may ask? Blend refers mixing two different types, rather than from two different distilleries. In our opinion, grain whisky is one of the least understood components of the industry. It’s made from corn, wheat and unmalted barely and brings out the more expressive flavors of Nikka.

The Nikka Company operates on two Coffey stills inside their distillery. The stills were imported from Scotland in 1963 to coincide with their elaborate blended whisky recipe. Each still holds more depth of flavor than any of the modern day ones used by other distilleries today.

Tasting Notes

A light caramel color with a strong aroma of vanilla and pepper on the nose. It has a soft, yet supple flavor on the palate. Notes of caramel, melon, candied nuts and sweet butterscotch fill your mouth. It can be described as almost exotic and fruity in nature. The finish packs some heat but has a lingering sweet cream flavor.

How to Enjoy

We recommend pairing Nikka Grain a couple different ways. It will go great in a whisky soda, which is whiskey, club soda and garnished with lemon. Or if you wish to go the sweeter cocktail route, we recommend a classic whisky sour made with whisky, sour mix, crushed ice and maraschino cherries.

Two Kentucky Classics Meet at the Derby

It’s almost that time of year again! What time you ask? Think women with big hats, men in pastel colored shorts and course, mint juleps. We’re talking about the Kentucky Derby! And this year everyone will be drinking the ready-to-serve Old Forester Mint Julep.

Recently, Old Forester Mint Julep has been named the official drink of the Kentucky Derby. This is the first time the brand has held this honor. It just might have to do with all the recent buzz around Old Forester within the bourbon bubble. Its rising popularity has led to new special edition bottles, several acclamations and a plan in the works to build a distillery in the heart of Louisville — a project that will cost $30 million.

Old Forester Brand Manager Therese McGuire says, “Old Forester was a natural fit for the Official Drink status. It’s a bourbon brand with as rich of a history as the Kentucky Derby and has such strong ties to Louisville.” The drink will be sold at Churchhill Downs and in retail in 36 markets across the U.S., including Payless Liquors here in Indianapolis.

Old Forester Goes Back To It’s Roots


In 1870, Old Forester’s founder George Garvin Brown changed the industry by producing a combination of bourbons from three different distilleries to create an incredibly balanced product. Prior to Brown’s discovery, bourbon was only sold by the barrel with caused the quality and taste profile to vary. Old Forester 1870 Original Batch celebrates the innovative technique of its founder in a 90-proof bourbon.

The Original Batch
The combination of 1870 includes three different barrels from three different warehouses with a different day of production, as well as a different proof and maturation. This process of “batching” bourbon gives the product a more consistent and pleasant flavor for the ideal product. The Orignal Batch is meant to echo the original batching process started by Brown in 1870.

Flavor Profile
The nose is very bright and vivid with fruit and floral scents. Vanilla and caramel notes provide a sweet base. On the palate mimics it’s aroma with the continued light, lively floral and fruity flavors. The sweet vanilla and oak make the bourbon an easy drink to enjoy. You may also sense a kick of baking spice, ginger and cinnamon. Finally, 1870 finishes with a candy-like character full of nutmeg, cinnamon and cinnamon flavors. There is also an added oak note that can be tasted throughout the long and smooth finish.

Two Classics, Being Original

Spring is here and we can’t think of better way to celebrate warmer temperatures than a fantastic glass of bourbon! This week on our blog we are featuring two new must-have bourbons to the Palyess Liquors collection: Maker’s Mark Cask Strength and Jim Beam Distiller’s Masterpiece.

Maker’s Mark Cask Strength

Maker’s just got stronger. The new Cask Strength variation is bottle straight from the barrel at 108 to 114 proof. They’ve upped the ante with this release by increasing the oak, caramel, vanilla and spice. Tasting notes include the sweet caramel foundation with notes of warm cinnamon and subtle oak spice. The complex, yet balanced flavors all come together for a sweet, wine-like finish with lingering heat and spice.

The Spirit Journal even said it’s, “Simply the best Maker’s Mark ever.” This is the first time Maker’s Mark has offered their product in cask strength. It’s unaltered, uncut and unparalleled to any other cask strength bourbon.

Jim Beam Distiller’s Masterpiece

This limited edition release is one for the books. Distiller’s Masterpiece is a strong 100-proof and extra-aged in the optimal rack-house position, as determined by Master Distiller, Fred Noe. The next step in the aging process is a final finish in PX-Sherry casks for a unique flavor. This Masterpiece is characterized by rich and smooth flavors of orange, vanilla, cinnamon and all spice, with hints of toasted wood. There are also bold notes of dark fruits including plums, cherries and raspberries. Sweet and silky on the finish.

This Jim Beam Distiller’s Masterpiece certainly isn’t the first of its kind. Jim Beam has released previous bottles including those finished in cognac and port cask. The collection is made up of two Sherry cask variations. The Distiller’s Masterpiece comes packaged in a luxury wooden case, which makes it all the more special.

Master Distiller Honored with Midleton Barry Crockett Legacy


In honor of the upcoming holiday, St. Patrick’s Day we would like to highlight a product that hails all the way from Ireland. Midleton Barry Crockett Legacy is a single pot still Irish whiskey that was first introduced by Irish Distillers in 2011. The name Barry Crockett pays tribute to Midleton’s Master Distiller.

After 47 years of work, Crockett said goodbye in February of 2013. After much success, it’s only fitting that the man behind Midleton for over 30 years had a bottle honored after him. The expression of the Irish whiskey reflects Crockett’s overall personality. It’s an older, yet elegant selection of Pot Still whiskeys which is exclusively matured in American bourbon barrels.

Tasting Notes

A delicate whiskey, the aroma of Barry Crockett Legacy is a complex combination of spice and fruit with notes of toasted wood. On the palate, this Irish whiskey is full bodied with a harmonious balance of sweet lime, berries and spicy green pepper. With the introduction of the virgin American barrels, it offers a sweet vanilla flavor and a subtle char. The finish is satisfying long with flavors of caramel and fruit that fade into a sweet woody note.

Welcome Bourbon Women To Indy Part II


In case you missed our last blog post, we had a big announcement. On March 7th we will be hosting the Bourbon Women organization’s inaugural Indy Sip & Shop Grand Bourbon tasting. The event will take place at the Greenwood Mall store from 2-5 pm. Over 30 distilleries will be present, along with a craft bourbon cocktail bar, food from local restaurants and Master Distillers from Garrison Brothers and Hobson Roberts.

In our last blog post we also introduced you to three bourbons that will be at Sip & Shop. And again this week we would like to introduce three more bourbon that will be available to sample.

Journeyman Featherbone Bourbon Whiskey

Featherbone Bourbon is an organic whiskey that hails from Journeyman Distillery in Three Oaks, Michigan. The mashbill is mainly made up of Midwest corn and additions of Michigan wheat, rye and malted barley. It’s bottled at 90 proof and embodies a light chestnut color. Featherbone offers unique tones of cracked pepper and a twist of citrus.


High West American Prairie Reserve Bourbon

Sweet like candy, this bourbon provides an explosion of flavors. Enjoy tastes of pecan pie and rye spice on the finish. High West Distillery is extremely passionate about preserving the American West’s culture and heritage. With the purchase of a bottle of Prairie Reserve Bourbon, High West will donate 10% of the profits to the American Prairie Reserve in northeastern Montana. 

Prichard’s Double Barreled Bourbon

Barreled at 125 proof and bottled as low as 80, Prichard’s bourbon undergoes a very expensive and labor intensive aging process. The result is sweet tones of vanilla and honey. Jefferson’s Ocean: Aged at Sea

Taste Jefferson's Ocean.Featured several times on our blog and social media, Jefferon’s Ocean by Jefferson’s Bourbon has an incredible story behind it. Each batch contains bourbon that was literally aged at sea in bourbon barrels where they traveled around the world stopping at five different continents and crossing the equator four times. The theory behind aging at sea is that the constant movement of the liquid in the barrels speeds up the aging process and comes into contact with the wood more often, which provides stronger flavors. A seriously tasty bourbon, Ocean is rich and deep is character with notes of dark fruit, all spice and vanilla. The finish is a well-balanced, medium-long and filled with caramel, wood, salt and vanilla.

Barrel Chested Barleywine

Taste Barrel Chested.Created by local brewery, Upland Brewing Company this barelywine ale will be tasted at the event because it’s aged in Willet Distillery bourbon barrels. This isn’t necessarily a new trend. Before metal kegs, beer was fermented and stored in oak barrels similar to those used to age bourbon whiskey. This process adds an added vanilla flavor to beer. Barrel Chested provides similar flavors with rich notes of toffee, warm vanilla and sweet caramel. You will also notice the undertones of toasted oak and sweet bourbon. Barleywine will certainly please and unite those craft beer and bourbon lovers.

Backbone Bourbon Uncut

Taste Backbone Bourbon.Another local favorite, Backbone Bourbon is distilled in Lawrenceburg, Indiana and then bottled in small batched in Bardstown, Kentucky. Uncut gives bourbon enthusiasts a taste of the real flavors by not “cutting” the bourbon with water; a very common practice with other bourbons on the market. Backbone feels their customers shouldn’t miss out on the characteristic flavors that are lost during their practice. One can now enjoy the originality and purity of bourbon, while also giving them the option to choose how strong they would like to sip their bourbon. Put On Your “Bib and Tucker”


The wait is finally over for a certain small batch bourbon. 35 Maple Street, which brings you Masterson’s Whiskey has released their bourbon and it goes by the name Bib and Tucker. Best known for its Canadian Whiskeys, 35 Maple Street offers a bourbon worthy of acclamation and comparison to the greats.

The name “bib & tucker dates back to early America. The term was used to describe your finest attire that one would wear to a special dance or wedding. 35 Maple Street was thinking along those lines when creating their finest bourbon product. The bourbon comes from an undisclosed Tennessee distillery. The bottle is a one-of-a-kind amber colored glass with custom embossing.

Just like your finest dress, Bib & Tucker is hand-crafted from the best of the best. Its smooth bourbon flavors are a combination of chestnut and warm vanilla. The makers ensure that you will feel a sense of dedication with each bottle and know that it’s something truly special.

The Nose

Scents are earthy tones with notes of leather-bound books, barley, fresh cut grass and chestnuts. There are also strong tones of vanilla that lead the aroma.

The Palate

Similar to the nose, the taste has an earthy base. It’s definitely a smooth first sip and well balanced with a lingering sweet tip. Some notes of cinnamon, dried apricots, caramel, black liquorice and again the warm vanilla bean from the nose. All these flavors are complimented by a subtle touch of ginger spice.

The Finish

Overall the finish is very similar to most bourbon. Again the earthy tones of grass, leather and pine dominate. The medium-length finish is semi-dry and leaves a lasting chestnut taste.

The Rarest of Them All: Macallan Rare Cask


Rare products like this come every few times in a lifetime. Macallan Rare Cask Single Malt Whisky is one for the books. To some the quality for a whisky is all about the age on the bottle, but for this product Macallan defies those standards and lets the whisky speak for itself.

Macallan Rare Cask Single Malt Scotch Whisky is the newest addition to 1824 Masters Series. Each bottle was handpicked by Master Blender, Bob Dalgarno from only Spanish sherry seasoned oak casks. These casks are some of the rarest and most precious of all. Only barrels from the top 1% at the distillery are used to make Rare Cask. You’ll also notice that there is no-age-statement present on each bottle. There is speculation on this age, but the true age remains unknown.

The combination created by Macallan can be described as a richer, darker and more chocolately version compared to their other products. It represents an aggressive and more modern approach from the typically conservative whisky. By taking age out of the equation, Macallan choose to focus more on the wood aspect of the Rare Cask. Each bottle also comes in a swanky gatefold box. Perfect to display in your collection.

From the start Rare Cask is an intensely deep-amber color, which pays homage to the classic Macallan whisky. At 43% alcohol by volume, it opens with a nose that is very rich in citrus, with notes of chocolate, nut, and wood and warm spice. From your first sip, you will taste notes of baking spice, dark fruits like plum, apricots, walnuts and milk chocolate. Sweet and smooth on the finish. Also note the full-bodied and oak flavors on the finish.

Swift as a Shadow, Short as a Dream: A Midwinter Night Dram

Brought to you by High West Distiller, a Midwinter Nights Dram is the perfect whiskey to keep you warm through the coldest of nights. Inspired by Shakespeare’s A Midsummer Night’s Dream, the makers guarantee one taste will transport you to a dreamlike state.

The making of A Midwinter Night’s Dram starts with Rendezvous Rye. The rye offers a sweet base of vanilla, caramel and cinnamon. Then the whiskey is aged in port and French oak barrels. The process of aging in the port barrels enhance the whiskey with flavors of plum and dried fruit. The French oak barrels then offer the hint of warm spice. Midwinter also embodies a deep red mahogany color.

The Nose

Smells of rich red wine on the nose. There are also subtle hints of raspberry and orange.

The Palate

A velvety smooth taste, enjoy bursts of raspberry and cherries. Notes of ginger, vanilla cream, fruitcake and rhubarb are also present. The taste evokes similar flavors of the holidays with nutmeg and allspice.

The Finish

A soft fade on the finish. A medium length with less spice, yet warming.

Midwinter Nights Dram can be described as similar to that of a Christmas plum pudding with the flavors of mulling spices, dried fruit and cream. We recommend sipping it neat by the fire alongside friends and family. Christmas may have come and gone this past year, but don’t that let that stop you from enjoying the rich taste of this rye whiskey.

The Lost Prophet is Found


You’ve heard of Barterhouse, Old Blowhard and Rhetoric. Now we welcome the fourth edition to Orphan Barrel’s collection, Lost Prophet. We suggest you judge this book by its cover.

A 22 year old rye whiskey, Lost Prophet was distilled in 1991 at the old George T. Stagg Distillery in Frankfort, Kentucky. Then the whiskey further aged in the Sitzel-Weller Warehouses in Louisville. This extensive aging process adds sharp varying tones to Lost Prophet. After 22 years of aging in charred barrels, this whiskey certainly has a robust and enjoyable smoky flavor.

One of the most intriguing parts of this whiskey, besides its strong flavors, is the packaging. Lost Prophet’s label is meant to reflect its divine and intricate personality by mixing line illustrations, embellished typography and gaudy borders. An embossed gold design on the primary label showcases the symbolism of the “lost lamb.” The rich amber colors of the whiskey offer a beautiful backdrop behind the black designs.

On the nose, Lost Prophet’s aroma is filled with sweet notes of honey, summer fruit and clove.  At first sip, you will taste flavors of spice cake, warm vanilla and leather and ends with a sweet, sweet smoky finish.

In an effort to produce the most quality product, Orphan Barrel has only distributed a small quantity of Lost Prophet, making it a great buy.

Look forward to Orphan Barrel’s fifth release, Forged Oak to make its appearance in early February for this year. It’s a 15 year old bourbon from the Bernheim Distillery, before it was sold to Heaven Hill. It has a much sweeter finish compared to Lost Prophet.

Celebrating the Craft Whiskey of the Year

The beginning of a new year calls for celebrating those things that were standouts in the past year. Today we would like to celebrate a renowned whiskey product that is now available at Payless Liquors stores. That product would be none other than St. George Single Malt, Lot 14.

Named “Craft Whiskey of the Year” by Whiskey Advocate Magazine, St. George Single Malt will surely not disappoint. Hailing from Alameda, California, this whiskey is as American as they get. The finished product comes from a combination of ex-bourbon, ex-Tennessee, French and American oak sherry and port, St. George apple brandy and Blacksmith Cellars white wine barrels. As you can tell, this combination of barrels certainly adds to the complex of flavor Lot 14 provides. The 100% barley whiskeys is aged between 4 to 15 years and bottled at 86 proof.

The Nose

Aroma is a combination of all spice, chocolate, ripe mango and a refreshing floral scents. The heavy chocolate aroma offers a decedent introduction.

The Palate

On the palate, enjoy an overwhelming taste of grain and sweet honeysuckle, with hints of dark chocolate. Notes of spice and creamy vanilla are also present at the first sip. A bit dry, but don’t let that discourage you.

The Finish

A hauntingly sweet finish leaves note of spice and delicate fruit. One glass won’t be enough.
